The main difference between real masala chai and coffee-shop chai is the source and preparation: authentic masala chai is fresh-brewed on a stove using whole Assam black tea leaves, crushed spices, water, milk, and Gud (jaggery). Coffee-shop chai is almost always made by steaming milk with a commercial liquid syrup concentrate or sugary premix powder, resulting in a heavily sweetened beverage that lacks true spice complexity

Why Coffee Shops Rely on Liquid Concentrate

Specialty coffee shops prioritize speed and volume above all else. Brewing fresh masala chai on a stovetop takes 5 to 7 minutes of active simmering—a timeframe that doesn't fit a fast-paced espresso line or drive-thru window.

To solve this, commercial suppliers created shelf-stable liquid concentrates packed with refined sugar, artificial flavorings, and preservatives. While convenient for quick service, this mass-production process strips away the fresh aromatic oils, heat, and rich texture that define traditional South Asian chai culture.

How We Brew Real Chai at Chaitown HQ

At our café headquarters in Beaverton, Oregon, we don't cut corners with pre-made liquid syrups. We simmer real Assam black tea and house-blended masala on the stove every single day.

  • Cardamom & Ginger Balance: We highlight natural green cardamom aroma and warm ginger heat rather than masking the cup under artificial cinnamon and heavy sugar.
  • Gud (Jaggery) Sweetness: We use traditional Gud to provide a caramel-like depth that rounds out the spices naturally.
  • Fresh Stove-Top Extraction: High heat pulls out the natural tea tannins and aromatic spice oils, giving the brew its signature golden body.
